Cool, creamy Greek yogurt sauce with shredded cucumber, garlic, lemon juice, and fresh dill. The essential dip for kabobs, burgers, and grilled chicken.

The Story

Tzatziki is the sauce that makes kabobs a meal. The key is getting as much moisture out of the cucumber as possible — shred it on a cheese grater, spread the gratings over a dish towel, wrap it up, and wring hard. Don't be shy about it. Repeat with a second dry towel. Once the cucumber is properly dried out, the rest comes together in two minutes: Greek yogurt, garlic, lemon juice, and fresh dill. It keeps in the fridge until you're ready to serve, and it works on kabobs, burgers, grilled chicken, or anything else that needs a cool, creamy counterpoint.

Pudgy's Notes

The drying step is the whole game — skip it and the sauce turns watery. Two towels and real force makes the difference. Keeps refrigerated for up to 3 days.
