Lexington NC BBQ Slaw

15 min
Serves 8
slawBBQCarolinaside

The slaw that goes on the sandwich, not beside it. Shredded cabbage dressed in ketchup, white vinegar, sugar, and crushed red pepper — tangy and crisp.

The Story

The slaw that belongs on the sandwich. Lexington-style means it's dressed in a vinegar-ketchup base — not mayo — so it stays crisp and cuts through the richness of the pork.

Ingredients

  • 4 cupShredded Raw Cabbage
  • 1/4 cupSugar
  • 1/3 cupKetchup
  • 2 TbspWhite Vinegar
  • 1 tspKosher Salt
  • 1/2 tspBlack Pepper
  • 1/2 tspCrushed Red Pepper Flakes

Pudgy's Notes

Serve on pulled pork sandwiches or alongside the Lexington BBQ Dip. The longer it sits, the more the cabbage softens and absorbs the dressing.

Instructions

  1. 1

Shred the cabbage finely and place in a large bowl.

  2. 2

Whisk together the ketchup, vinegar, sugar, salt, pepper, and red pepper flakes in a separate bowl.

  3. 3

Pour the dressing over the cabbage and toss well to coat.

  4. 4

Refrigerate for at least 1 hour before serving — it gets better as it sits.
