Whole black peppercorns, coriander seeds, brown sugar, and paprika — the classic pastrami crust. Coarse, bold, and built to form a bark.

The Story

The classic pastrami crust — coarse, peppery, and built to form a bark. Whole peppercorns and coriander seeds get cracked (not ground fine) so they stay present through the cook.

Equipment

  • Spice grinder or mortar and pestle

Ingredients

  • 2 TbspWhole Black Peppercorns
  • 1 TbspGround Black Pepper
  • 1 TbspWhole Coriander Seeds
  • 1 TbspGround Coriander
  • 1 TbspBrown Sugar
  • 1 TbspPaprika
  • 2 tspGarlic Powder
  • 2 tspOnion Powder
  • 1/2 tspWhole Yellow Mustard Seeds
  • 1/2 tspMustard Powder

Pudgy's Notes

The coarse crack on the peppercorns and coriander is what makes this a pastrami rub — don't skip it. Apply after the brine, not before.

Instructions

  1. 1

Crack the whole black peppercorns and coriander seeds coarsely using a spice grinder or mortar and pestle — you want texture, not powder.

  2. 2

Combine cracked spices with all remaining ingredients and mix well.

  3. 3

Press firmly onto all sides of the brisket or beef. Refrigerate uncovered overnight before smoking or cooking.
