Ground beef browned and simmered with potatoes, bell pepper, onion, diced tomatoes, olives, and raisins in seasoned beef broth. Served over white rice with tortillas.

The Story

Picadillo is one of those dishes that looks simple until you taste it and realize something unexpected is going on. The olives and raisins are the thing — they sound like they don't belong, but they're exactly right. The olives bring a briny, savory note and the raisins bring a little sweetness, and together they balance the spiced beef and the starchy potatoes in a way that nothing else does. It's a Cuban and Latin American staple that shows up across the Caribbean and Mexico in slightly different forms, and this version is built around Yukon Gold potatoes that hold their shape through the simmer, Sazón for color and depth, and enough beef broth to create a loose, saucy consistency that soaks into the rice. The whole thing comes together in one skillet in about 30 minutes once the prep is done. Serve it over white rice with tortillas on the side.

Pudgy's Notes

Yukon Golds hold their shape better than russets during the simmer — don't substitute. Drain the diced tomatoes before adding or the dish will be too wet. The olives and raisins are not optional — they're the flavor balance that makes picadillo taste right. Sazón is available in most grocery stores in the Latin foods aisle; don't skip it or substitute with plain seasoned salt.

Instructions

  1. 1

Cook the white rice and set aside. Dice the bell pepper, onion, and potatoes. Slice the olives thin. Measure out the raisins.

  2. 2

Brown the ground beef in a large skillet over high heat, about 10 minutes. Drain and discard the grease.

  3. 3

Add the garlic, Sazón, cumin, oregano, black pepper, and chili powder. Stir to combine, about 1 minute.

  4. 4

Add the bell pepper, onion, and potatoes. Stir to combine, about 1 minute.

  5. 5

Add the beef broth and drained diced tomatoes. Stir, bring to a boil, then reduce to a rapid simmer, about 3 minutes.

  6. 6

Add the Spanish olives and raisins. Continue to simmer, stirring occasionally, until the liquid has mostly cooked off and the potatoes are tender, about 15 minutes.

  7. 7

Serve over white rice with tortillas on the side.
