Steak, chicken, and shrimp cooked in sequence in a hot skillet with peppers and onions, finished with fajita seasoning, and served with Spanish rice, refried beans, and flour tortillas.

The Story

The thing that makes fajitas work is cooking everything separately and then bringing it all together at the end. If you throw the steak, chicken, shrimp, peppers, and onions into the skillet at the same time you get a steam bath instead of a sear, and everything comes out gray and soft. The sequence is: peppers and onions first until they're just shy of done, then out of the pan. Steak next, high heat, done and out. Chicken next, high heat, done — then everything comes back in together with the shrimp and the seasoning. The shrimp cooks fast; by the time it's pink and curled the whole thing is ready. Spanish rice and refried beans go on the side, warm tortillas for wrapping, hot sauce and sour cream if you want them. This is a full spread — three proteins, two sides, tortillas — and it feeds a crowd.

Pudgy's Notes

Cook everything in sequence — don't crowd the pan or you'll steam instead of sear. Peppers and onions go first and come out slightly underdone; they'll finish when everything comes back together. The shrimp cooks fast — once it's pink and curled the whole skillet is done. Start the Spanish rice before you begin cooking the proteins so everything finishes at the same time.

Instructions

  1. 1

Slice the bell peppers and onion thinly. Slice the sirloin and chicken breast halves thinly. Thaw, deshell, and devein the shrimp. Set everything aside in separate bowls.

  2. 2

Start the Spanish rice according to box directions — it takes about 25 minutes and should be going while you cook the proteins.

  3. 3

Heat a large skillet or wok over high heat. Add the vegetable oil, then the peppers and onions. Cook to just shy of desired tenderness, about 3 minutes. Remove from the skillet and return to their bowl.

  4. 4

Cook the steak in the same skillet over high heat until done, about 5 minutes. Remove and return to its bowl.

  5. 5

Cook the chicken in the skillet over high heat until done, about 5 minutes. Add the steak, peppers and onions, and shrimp back into the skillet.

  6. 6

Add the fajita seasoning and cook according to packet directions until the shrimp is cooked through, about 5 minutes. Turn off the heat and cover with a lid to keep warm.

  7. 7

Heat the refried beans in a small saucepan over medium heat, about 3 minutes.

  8. 8

Serve the fajita mixture with warm flour tortillas, Spanish rice, and refried beans on the side. Add hot sauce and sour cream if desired.
