Soft Tacos

Seasoned ground beef in small flour tortillas, built with two kinds of onion — plain diced and onion with cilantro — plus two cheeses, shredded lettuce, and tomatoes.

The Story

Soft tacos and hard tacos are the same recipe with one meaningful difference: the tortilla changes everything about how you eat it. A flour tortilla folds around the filling instead of cracking apart, which means you can load it heavier and eat it cleaner. The other difference here is the onion — you prep two kinds. Plain diced onion goes in with the meat layer for a little bite. A separate portion of diced onion mixed with cilantro goes on top, closer to a street taco garnish. It's a small thing that adds a layer the hard taco version doesn't have. Everything else is the same: two cheeses, shredded iceberg, diced tomato, Cholula and sour cream if you want them. The El Pato variation works here exactly as it does on the hard shell version — swap the seasoning packet for a can of El Pato green sauce and water, cook it down until the liquid is absorbed, and you've got a different taco entirely.

Pudgy's Notes

The two-onion setup is the move that separates this from a basic soft taco — plain diced onion with the meat, cilantro onion on top. Small flour tortillas hold together better than large ones when loaded; don't overfill or they tear. El Pato green can is a direct swap for the seasoning packet — cook it down until the liquid is mostly gone.

Instructions

  1. 1

Shred the lettuce and dice the tomatoes. Dice one half onion for the meat layer. Dice the other half onion and mix with chopped cilantro for the topping. Grate both cheeses. Set everything aside.

  2. 2

Brown the ground beef in a skillet over high heat, about 8 minutes. Drain off the grease.

  3. 3

Add the taco seasoning packet and finish cooking according to package directions, about 3 minutes. (For the El Pato variation: replace the seasoning packet with one can of El Pato green sauce and a splash of water. Cook over medium heat until the liquid reduces into the meat, about 15 minutes.)

  4. 4

Assemble tacos on flour tortillas in order: meat, plain diced onion, onion-cilantro mix, cheese, lettuce, tomatoes.

  5. 5

Finish with Cholula hot sauce and sour cream if desired.
