Hard Shell Tacos

Seasoned ground beef in warmed hard shells, built the only correct way: meat, onions, cheese, lettuce, tomatoes. Hot sauce and sour cream optional but encouraged.

The Story

There is a correct way to build a hard taco and this is it: meat first, then onions, then cheese, then lettuce, then tomatoes. That order matters. The cheese goes on the hot meat so it starts to melt. The lettuce and tomatoes go on last so they stay cold and crisp. If you put the lettuce on first it gets soggy and warm and the whole thing falls apart. The shells go in a 325°F oven while the meat finishes — just long enough to get warm and crisp without going brittle. Two kinds of cheese, cheddar and Monterey Jack, because one is sharp and one melts better and together they're right. Cholula and sour cream are optional in the sense that you can skip them, but you shouldn't. The El Pato variation swaps the seasoning packet for a can of El Pato green sauce and water, cooked down until the liquid reduces into the meat. It's a different taco entirely and worth trying.

Equipment

  • Large skillet
  • Baking sheet
  • Oven @ 325°F (for shells)

Ingredients

  • 1/2 headiceberg lettuce, shredded
  • 2tomatoes, diced

  • 1 canEl Pato green can (optional — replaces taco seasoning)

Pudgy's Notes

The assembly order is not a suggestion — meat and onions go on first while everything is hot, cheese goes on the warm meat so it starts to melt, lettuce and tomatoes go on last so they stay cold and crisp. El Pato green can is a worthy swap for the seasoning packet; cook it down until the liquid is mostly absorbed into the meat.

Instructions

  1. 1

Shred the lettuce, dice the tomatoes and onion, and grate both cheeses. Set aside.

  2. 2

Brown the ground beef in a skillet over high heat, about 8 minutes. Drain off the grease.

  3. 3

Add the taco seasoning packet and finish cooking according to package directions, about 3 minutes. (For the El Pato variation: replace the seasoning packet with one can of El Pato green sauce and a splash of water. Cook over medium heat, stirring occasionally, until the liquid reduces to the desired consistency, about 15 minutes.)

  4. 4

Warm the hard taco shells on a baking sheet in a 325°F oven according to package directions, about 5 minutes.

  5. 5

Assemble tacos in the correct order: meat, onions, cheese, lettuce, tomatoes.

  6. 6

Finish with Cholula hot sauce and sour cream if desired.
