Chicken breast pieces seared and deglazed, finished in a chicken broth and heavy cream reduction with Parmesan, served over fettuccine.

The Story

The difference between good Chicken Alfredo and great Chicken Alfredo is the sauce — and the sauce is just chicken broth, heavy cream, and Parmesan reduced down in the same pan you cooked the chicken in. That's it. No jarred sauce, no roux, no tricks. The key is the deglaze: sear the chicken, pull it out, drain the grease, and hit the pan with dry white wine or sherry before the fond burns. That fond is flavor, and the deglaze lifts it into the sauce. The chicken goes back in diced, finishes cooking in the liquid, and then the cream and broth go in and reduce until the sauce coats the back of a spoon. Parmesan off the heat, salt and pepper, toss with fettuccine. If you want to make the noodles from scratch, do it — it's worth the hour. If you don't, boxed fettuccine works fine.

Equipment

  • Large skillet
  • Stock pot (for pasta)

Ingredients

  • 2 lbsfettuccine noodles, cooked (homemade or boxed)
  • 4chicken breast halves
  • 1/2 tbspgarlic powder
  • 1 tbspItalian seasoning
  • 1/2 cupdry white wine, sherry, or chicken broth (for deglazing)
  • 1 cupchicken broth
  • 1 cupheavy cream
  • 1/2 cupParmesan cheese, grated
  • salt and pepperto taste

Pudgy's Notes

Don't drain the deglaze — it's the flavor base for the whole sauce. Dry white wine or sherry is the first choice; chicken broth works as a substitute. Add the Parmesan off the heat only; if the pan is still hot the cheese can seize and go grainy instead of melting smooth. The sauce will continue to thicken slightly as it cools, so pull it off the heat just before it looks done.

Instructions

  1. 1

Cook the fettuccine noodles (homemade or boxed) and set aside.

  2. 2

Trim fat from the chicken breasts. Cut each half into thirds — use the thin end as one piece and fillet the thick end into two pieces. Season all pieces with garlic powder and Italian seasoning.

  3. 3

Cook the chicken in a lightly oiled skillet over medium-high heat until the outside is lightly browned, about 10 minutes. Work in batches if needed. The chicken does not need to be fully cooked through at this point.

  4. 4

Remove the chicken from the pan and drain the grease. Deglaze the pan with a small amount of dry white wine, sherry, or chicken broth, scraping up the fond. Do not drain — leave the deglaze in the pan. Turn off the heat.

  5. 5

Cut the chicken into bite-sized pieces that will fit on a fork alongside the noodles.

  6. 6

Return the diced chicken to the deglazed skillet. Heat over medium-high until all pieces are cooked through, about 5 minutes.

  7. 7

Add the chicken broth and heavy cream to the skillet. Bring to a boil and maintain a rolling boil, adjusting the heat so the cream doesn't boil over. Reduce until the sauce reaches the desired consistency, about 8 minutes.

  8. 8

Turn off the heat. Slowly stir in the Parmesan cheese until fully melted. Season with salt and pepper to taste.

  9. 9

Toss the fettuccine with the chicken and sauce, or serve the sauce and chicken on top of the noodles.
