Penne with Sausage

Italian sausage medallions fried and deglazed with dry sherry, simmered in marinara, then tossed with butter-garlic penne and finished with Pecorino Romano.

The Story

This is the pasta you make when you want something that tastes like it took effort but didn't. The whole thing comes together in about thirty minutes and the technique is simple: slice the sausage into medallions, fry them flat so both cut sides get a good sear, drain the grease, and deglaze with dry sherry to lift the fond off the bottom of the pan. That fond is flavor — don't skip the deglaze. The marinara goes in next and picks up everything left in the pan. Meanwhile the penne gets tossed with butter, granulated garlic, Parmesan, and black pepper while it's still warm, so the butter melts in and coats every piece. Combine the two, finish with Pecorino Romano, and you've got a pasta that tastes like it came from a red sauce joint.

Equipment

  • Large skillet
  • Stock pot (for pasta)

Ingredients

  • 1 boxpenne pasta, cooked
  • 10Italian sausage links, sweet or hot
  • 1/2 cupPecorino Romano cheese, grated
  • 1/4 cupdry sherry (or chicken or beef broth)
  • 1 1/2 jarsmarinara or spaghetti sauce
  • 2 tbspbutter
  • 1 tbspgranulated garlic
  • 1/4 cupParmesan cheese, grated
  • 1 tspblack pepper
  • 9 piecesgarlic bread (optional)

Pudgy's Notes

Don't skip the deglaze — the fond on the bottom of the pan after frying the sausage is where a lot of the flavor lives. Dry sherry is the first choice; chicken or beef broth works as a substitute. Toss the pasta with the butter and cheese while it's still warm so everything melts together before the sauce goes in.

Instructions

  1. 1

Cook the penne pasta in a stock pot according to package directions. Reserve the pot for combining later.

  2. 2

Slice the sausage links into 1/4-inch thick medallions.

  3. 3

Fry the sausage medallions in a large skillet over medium-high heat, flipping until cooked through and evenly browned on both sides, about 10 minutes.

  4. 4

Drain off the grease. Return the skillet to low heat.

  5. 5

Add the dry sherry to the skillet. Scrape the fond from the bottom of the pan to deglaze.

  6. 6

Add the marinara sauce. Thin with water or broth as desired by rinsing out the jar. Heat over medium heat until warm, about 5 minutes.

  7. 7

Add butter, granulated garlic, Parmesan cheese, and black pepper to the warm drained pasta in the pot. Stir to combine until the butter is melted and the pasta is coated.

  8. 8

Add the sauce and sausage to the pasta pot. Stir to combine. Finish with Pecorino Romano cheese.

  9. 9

Serve individual plates with Caesar or side salads. Garlic bread on the side if desired.
