Boneless chicken thighs marinated in white wine, olives, capers, prunes, and brown sugar, then baked at 375°F and served over penne pasta.

The Story

Chicken Marbella is one of those recipes that sounds more complicated than it is. The marinade does all the work — white wine, red wine vinegar, brown sugar, olives, prunes, capers, oregano, garlic, bay leaves. It's a strange combination on paper and an extraordinary one in the oven. The prunes melt into the sauce and add a sweetness that balances the brine from the olives and capers. The brown sugar caramelizes on top. The chicken thighs stay juicy through the whole bake because they're braising in the marinade. Serve it over penne and spoon the pan sauce over everything — that sauce is the reason you make this dish.

Equipment

  • 9x13 casserole dish
  • 2-gallon storage bag (for marinade)
  • Stock pot (for pasta)
  • Oven @ 375°F

Pudgy's Notes

Marinate overnight if you can — the flavor deepens significantly after 8 or more hours. Remove the bay leaves before serving. The pan sauce is the best part; spoon it generously over the pasta. Parmesan on top is optional but recommended.

Instructions

  1. 1

Combine white wine, chicken broth, red wine vinegar, brown sugar, olives, prunes, capers, oregano, garlic, bay leaves, and black pepper in a large bowl. Stir until the sugar is dissolved.

  2. 2

Add the chicken thighs to the marinade. Transfer to a two-gallon storage bag and place in the casserole dish. Marinate for 1 to 12 hours.

  3. 3

Preheat oven to 375°F. Remove the chicken from the storage bag and arrange in the 9x13 casserole dish with the marinade. Cover tightly with foil.

  4. 4

Bake covered for 1 hour. Remove the foil and continue baking for another 20 minutes to finish and caramelize the top.

  5. 5

While the chicken finishes, cook the penne pasta according to package directions.

  6. 6

Serve the chicken and pan sauce over penne. Top with Parmesan cheese if desired.
