Pounded chicken fillets layered with sage and prosciutto, seared prosciutto-side down, then finished with a white wine and chicken broth pan sauce mounted with butter.

The Story

Saltimbocca means 'jumps in the mouth' in Italian, and once you've had it you understand why. The combination of sage, prosciutto, and chicken is one of those things that's been around for centuries because it's just right. The technique is straightforward but the details matter: pound the chicken thin so it cooks fast and evenly, put the prosciutto side down first so it crisps against the hot pan, and work in batches so you're not steaming instead of searing. The pan sauce is the payoff — deglaze with white wine to lift the fond, add sage and garlic until fragrant, reduce chicken broth by half, then kill the heat and whisk in cold butter. That last step, mounting the sauce with butter, is what turns a pan dripping into something silky and restaurant-worthy.

Equipment

  • Large skillet
  • Meat tenderizer

Ingredients

  • 6chicken breast halves
  • 1/3 cupflour
  • to tastechicken seasoning
  • 12fresh sage leaves (for chicken)
  • 6 slicesprosciutto
  • 1 cupwhite wine (Pinot Grigio)
  • a fewfresh sage leaves and garlic (for sauce)
  • 2 cupschicken broth
  • 1 tbspbutter

Pudgy's Notes

Pound the chicken to an even 1/4-inch — uneven thickness means part of it overcooks before the rest is done. Prosciutto side down first so it crisps and bonds to the chicken instead of steaming off. Mounting the sauce with butter only works off the heat; if the pan is still hot the butter breaks and goes greasy instead of silky.

Instructions

  1. 1

Butterfly each chicken breast half or slice into thirds. Place in a storage bag and pound to a 1/4-inch thickness.

  2. 2

Add flour and chicken seasoning to the bag with the chicken. Seal and shake to coat each piece evenly.

  3. 3

Lay a sage leaf on each fillet, then cover with half a slice of prosciutto. Press gently to adhere. Set aside.

  4. 4

Heat a large skillet over high heat. Cook the chicken in three batches, placing each piece prosciutto-side down first. Cook about 5 minutes per batch, flipping once. Keep finished batches warm while the rest cook.

  5. 5

Drain the oil from the pan but leave the fond. Deglaze with the white wine, scraping up the browned bits.

  6. 6

Add a few sage leaves and garlic to the pan. Stir for about 30 seconds until fragrant.

  7. 7

Pour in the chicken broth. Cook over high heat until the sauce is reduced by half, about 10 minutes.

  8. 8

Turn off the heat. Whisk in the butter to mount the sauce until smooth and glossy.

  9. 9

Spoon the sauce over the chicken and serve with polenta, potatoes, or pasta.
