Green beans and seasoned ground beef in a tomato-paste and Catalina dressing sauce, topped with buttery mashed Yukon Golds and baked at 375°F. Served with salad.

The Story

This version of Shepherd's Pie has a sauce that most people won't recognize but everyone will like. The base is tomato paste and beef broth, which is standard enough, but then ketchup, mustard, and Catalina dressing go in — and that combination is the whole point. The Catalina brings a sweet-tangy note that cuts through the richness of the beef and the mashed potatoes in a way that plain gravy doesn't. The layering order matters: green beans on the bottom of the casserole dish, beef mixture on top of that, mashed potatoes on top of everything. The potatoes are Yukon Golds beaten with butter, milk, and cream until they're rich and smooth — they need to be substantial enough to sit on top without sinking. French fried onions on top before baking are optional but worth doing; they add crunch and a savory note that plays well against the creamy potatoes. Serve with salad.

Equipment

  • Stock pot (for potatoes)
  • Large skillet
  • Casserole dish
  • Potato masher or hand mixer
  • Oven @ 375°F

  • 1/2 tbspCatalina dressing
  • 1 cangreen beans, drained

Pudgy's Notes

Beat the potatoes with enough milk and cream that they're rich and smooth — they need to hold their shape on top of the filling without sinking in. The Catalina dressing amount is small but it matters; don't skip it or substitute a different dressing. Layer in order: green beans first, then beef, then potatoes — this keeps the beans from getting lost in the filling. French fried onions on top add crunch and are worth doing if you have them.

Instructions

  1. 1

Boil the peeled and cubed Yukon Gold potatoes for 20 minutes or until fork-tender. Drain and return to the pot.

  2. 2

Add butter, milk, and cream to the potatoes. Mash and beat until the desired consistency is reached. Season with salt and pepper to taste. Set aside.

  3. 3

Brown the ground beef with the diced onion in a large skillet. Drain the grease, about 10 minutes.

  4. 4

Add the tomato paste and beef broth to the skillet. Stir to incorporate, about 1 minute.

  5. 5

Add the ketchup, mustard, and Catalina dressing. Stir to incorporate. Season with salt and pepper to taste, about 1 minute.

  6. 6

Spread the drained green beans in an even layer on the bottom of the casserole dish. Cover with the ground beef mixture. Top with the mashed potatoes. Optionally, top with French fried onions before baking.

  7. 7

Bake at 375°F until heated through and the top is set, about 20–25 minutes.

  8. 8

    Serve with salad.
