Ground beef with sloppy joe seasoning, tomato paste, and diced green chiles simmered to the right consistency, piled onto good buns and topped with sliced dill pickles.

The Story

The trick with Sloppy Joes is not overcomplicating them. Seasoning packets exist for a reason — they're already dialed in, and fighting them with a bunch of extra ingredients just muddies the result. The move here is to use two packets for the full batch, add a can of diced green chiles for a little heat and depth, and let it simmer down to the consistency you want. The tomato paste goes in with the water called for on the packet instructions — open both ends of the can and push it straight through so it doesn't stick. Bun choice matters more than people think: a poppy seed bun, a brioche, or any good sturdy hamburger bun holds up to the filling without falling apart. Sliced dill pickles on top cut through the richness and are not optional. Serve with fries, tater tots, chips, or macaroni salad on the side.

Equipment

  • Large skillet

Ingredients

  • 2 1/2 lbsground beef
  • 1 cantomato paste
  • 1 candiced green chiles
  • 2 packetsSloppy Joe seasoning
  • 12poppy seed, brioche, or good hamburger buns
  • 1 jarsliced dill pickles

Pudgy's Notes

Two seasoning packets for the full batch — one isn't enough for 2.5 lbs of beef. Push the tomato paste through both ends of the open can so none of it stays stuck inside. Simmer time controls consistency: less time for a looser filling, more time for a tighter one that holds on the bun better. Don't skip the pickles — they balance the richness of the meat.

Instructions

  1. 1

Open both ends of the tomato paste can and set it near the skillet so it's ready to push through.

  2. 2

Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks, about 10 minutes. Drain the grease.

  3. 3

Add the Sloppy Joe seasoning packets, tomato paste, the water called for on the packet directions, and the diced green chiles. Stir to fully incorporate. Bring to a boil, then reduce to a simmer. Cook until the mixture reaches your desired consistency, about 5 minutes.

  4. 4

Spoon the Sloppy Joe mixture onto buns and top with sliced dill pickles. Serve with French fries, tater tots, chips, or macaroni salad on the side.
