Seasoned hamburger patties layered over Yukon Gold potatoes and peas and carrots, sealed in double-wrapped foil and cooked in the oven, on the grill, or tossed straight into the campfire.

The Story

Foil dinners are campfire food that works just as well in the oven or on the grill, which means you can make them any time of year without waiting for a camping trip. The concept is simple: potatoes on the bottom, peas and carrots on top of the potatoes, hamburger patty on top of everything, sealed tight in double-wrapped foil. The steam trapped inside does all the work — the beef juices run down through the vegetables as it cooks and everything comes out seasoned and tender. Double-wrapping the foil is not optional; a single layer tears too easily and you lose the steam. Montreal Steak Seasoning is the go-to here, but salt, pepper, and Caldo de Res works just as well and gives it a slightly different character. Serve it dumped out onto a plate or eat it straight out of the foil boat — either way is correct.

Equipment

  • Oven @ 400°F, grill @ 400°F, or campfire
  • Aluminum foil (2 sheets per packet)

Ingredients

  • 3 lbsground beef
  • 6Yukon Gold potatoes, sliced
  • 1 bagpeas and carrots (frozen)
  • 2 tbspMontreal Steak Seasoning, or salt, pepper, and Caldo de Res
  • 18 sheetsaluminum foil, 18 inches long (2 sheets per packet)

Pudgy's Notes

Double-wrap the foil — a single layer tears and you lose the steam that cooks everything. Potatoes go on the bottom so they're closest to the heat and have the most time to soften. The beef juices run down through the vegetables as the patty cooks, which is most of the seasoning. Campfire timing varies depending on coal heat; check at 25 minutes and go longer if needed.

Instructions

  1. 1

Divide the ground beef into 9 equal portions and form each into a hamburger patty. Season as desired with Montreal Steak Seasoning or salt, pepper, and Caldo de Res, about 10 minutes.

  2. 2

Double up two sheets of aluminum foil per packet (9 packets total). Layer the bottom of each packet with sliced potatoes, then peas and carrots on top of the potatoes, then place a seasoned hamburger patty on top. Seal each packet tightly, about 10 minutes.

  3. 3

Cook at 400°F in the oven, on the top rack of a grill at 400°F, or toss directly into a campfire for 25–35 minutes, or until done.

  4. 4

Dump out onto a plate and serve, or eat straight out of the foil boat.
