Seasoned ground beef with onion and bell pepper, tomato paste, beef broth, and cheddar stirred in, transferred to a casserole dish, topped with Italian breadcrumbs, and baked at 375°F. Served with salad.

The Story

American Chop Suey is New England comfort food — ground beef and macaroni in a seasoned tomato base, baked under a breadcrumb crust until it's bubbling and golden. This version has more going on than the basic one-pot version: the beef gets browned with onion and bell pepper, a full spice blend goes in, then tomato paste and beef broth to build the sauce, and cheddar cheese stirred in while it's still hot so it melts into the whole thing before it goes into the casserole dish. The Italian breadcrumb topping bakes into a crust that gives you texture on every bite. It's the kind of dish that looks like you put in more effort than you did, reheats well the next day, and goes with a simple salad on the side.

Equipment

  • Large skillet
  • Stock pot (for pasta)
  • Casserole dish
  • Oven @ 375°F

Ingredients

  • 1/2 boxmacaroni, cooked and set aside
  • 1 mediumonion, diced
  • 1bell pepper, diced
  • 2 lbsground beef
  • 1 tbsppaprika
  • 1 tbspchili powder
  • 2 tspcumin
  • 1 tspground oregano
  • 1 tspblack pepper
  • 1 tspgarlic powder
  • 1 cantomato paste
  • 1 cupbeef broth
  • 1 cupcheddar cheese, shredded
  • to coverItalian-style breadcrumbs

Pudgy's Notes

Cook the macaroni first so it's ready to fold in when the beef mixture is done — the whole skillet step moves fast once the spices go in. Stir the cheddar in off or over low heat so it melts smoothly into the mixture rather than seizing. Don't skimp on the breadcrumb layer; it should cover the top fully to bake into an even crust.

Instructions

  1. 1

Cook the macaroni according to package directions. Drain and set aside.

  2. 2

Brown the ground beef with the diced onion and bell pepper in a large skillet over high heat, about 10 minutes. Drain and discard the grease.

  3. 3

Add the paprika, chili powder, cumin, oregano, black pepper, and garlic powder. Stir to combine and reduce heat to medium, about 1 minute.

  4. 4

Add the tomato paste and beef broth. Stir until fully incorporated, about 1 minute.

  5. 5

Add the shredded cheddar cheese and stir until melted, about 1 minute.

  6. 6

Add the cooked macaroni and stir to combine. Transfer the mixture to a casserole dish.

  7. 7

    Top evenly with Italian-style breadcrumbs.

  8. 8

Bake at 375°F for 25 minutes until the top is golden and the dish is bubbling.

  9. 9

Serve with salad on the side.
