Fried chicken tenders over iceberg lettuce, tomatoes, grated carrot, cheddar, and bacon, dressed with a honey mustard vinaigrette — served hot chicken on cold salad.

The Story

This one is built around contrast — hot fried chicken on a cold crisp salad. The chicken is frozen tenders, which sounds like a shortcut and is absolutely a shortcut, but it's the right one. They fry up consistently, hold their crunch, and chop into clean pieces that sit on top of the salad without sinking in. The honey mustard dressing is the kind you make once and want to put on everything: mayo, honey, Dijon, a splash of apple cider vinegar, salt and pepper. It's tangy and a little sweet and it coats the lettuce without drowning it. The key to the whole dish is timing — the lettuce should still be cold and the chicken should still be hot when it hits the table.

Pudgy's Notes

The contrast between cold salad and hot chicken is the whole point — don't let the chicken sit. Fry in two batches and keep the oil at 360°F; crowding the pot drops the temperature and the tenders come out greasy instead of crisp. A wire rack keeps the bottom crust from steaming.

Instructions

  1. 1

Preheat frying oil in a Dutch oven to 360°F.

  2. 2

Cook and chop the bacon. Chop the iceberg lettuce, slice the tomatoes into wedges, and grate the carrots. Combine lettuce, tomatoes, and carrot in a large salad bowl. Toss to combine and set aside.

  3. 3

Whisk together mayonnaise, honey, Dijon mustard, and apple cider vinegar. Season with salt and pepper to taste. Set aside.

  4. 4

Fry the frozen chicken tenders in two batches at 360°F, about 5 minutes per batch. Maintain oil temperature — don't let it climb too high or drop too low. Drain on a wire rack.

  5. 5

Chop the fried chicken tenders into bite-sized pieces.

  6. 6

Build individual salads: start with the salad mixture, then add cheddar cheese, bacon, and a drizzle of honey mustard dressing. Top with the chopped chicken tenders.

  7. 7

Serve immediately while the lettuce is still cold and the chicken is still hot.
