Honey Teriyaki Chicken

Soy-marinated chicken thighs grilled and sliced, then wok-tossed with bok choy and onions in a honey teriyaki sauce thickened with cornstarch.

The Story

This one is a hybrid — the chicken goes on the grill, the vegetables go in the wok, and they come together in a honey teriyaki sauce that's a little sweeter and a little lighter than the beef stir fry version. The soy sauce marinade does double duty: it flavors the chicken before it hits the grill, and the reserved marinade goes straight into the sauce. Grilling the thighs first gives you char and smokiness that you'd never get from a wok alone, and slicing them into cubes after they rest means every piece picks up the sauce when you toss everything together. The cornstarch slurry at the end is the same move as the beef stir fry — push to the sides, thicken in the center, fold it in.

Pudgy's Notes

Reserve the soy sauce marinade after removing the chicken — it goes directly into the sauce. Optional additions: grated carrots, bean sprouts, cabbage, or other vegetables. Add chili pepper flakes or paste for heat. Can also be served with macaroni salad and rice for a plate lunch-style meal.

Instructions

  1. 1

Marinate the chicken thighs in 1 cup of soy sauce for 2–6 hours.

  2. 2

Julienne the bok choy, bias-slice the celery, and radially slice the onions. Set aside.

  3. 3

Combine chicken broth, the reserved soy sauce marinade, honey, hoisin sauce, rice vinegar, sesame oil, ginger, garlic, and white pepper in a bowl. Stir well and set aside.

  4. 4

In a small ramekin, stir together the cornstarch and cold water until smooth to form a slurry. Set aside.

  5. 5

Grill the marinated chicken thighs over medium-high heat for about 15 minutes until cooked through. Remove and let rest for 5 minutes, then slice into bite-sized cubes.

  6. 6

Heat the wok over high heat. Add vegetable oil and sesame oil. Sauté the vegetables for about 3 minutes until the onions are just slightly translucent — don't overcook.

  7. 7

Add the sliced chicken to the vegetables in the wok over medium heat. Stir to combine.

  8. 8

Pour the sauce over the stir fry and heat until it just approaches a boil, about 3 minutes.

  9. 9

Push the stir fry to the sides of the wok, clearing the center. Add the cornstarch slurry a little at a time, stirring frequently, until the sauce reaches your desired thickness. Fold everything together.

  10. 10

    Serve over cooked rice.
