Whole chicken breasts brined overnight in brown sugar and soy, then grilled over medium-high heat and finished with BBQ sauce caramelized over high heat.

The Story

The brine is what separates good grilled chicken from great grilled chicken. Whole breasts are unforgiving on the grill — they dry out fast and there's no fat to save them. But brine them overnight in brown sugar, kosher salt, soy sauce, and a couple sprigs of rosemary, and something changes. The meat holds moisture through the whole cook, the outside caramelizes instead of drying out, and the flavor goes all the way through. After the brine, coat them in BBQ rub and get them on a hot grill. The optional BBQ sauce finish over high heat at the end is worth doing — the sugars in the sauce caramelize against the char and you get something that tastes like it came off a competition smoker.

Equipment

  • Gas or charcoal grill
  • 2-gallon container (for brine)
  • Instant-read thermometer

Ingredients

  • 1 galcold water
  • 1 cupbrown sugar
  • 3/4 cupkosher salt
  • 3/4 cupsoy sauce
  • 2 sprigsfresh rosemary
  • 3whole chicken breasts
  • to coatBBQ rub
  • 6 tbspBBQ sauce (optional)

Pudgy's Notes

Don't skip the brine — it's the whole reason this works on whole breasts. 12 hours is the minimum; overnight is better. Pat the chicken completely dry before applying the rub or it won't stick. The BBQ sauce finish is optional but recommended — high heat for a short burst caramelizes the sugars without burning.

Instructions

  1. 1

Combine cold water, brown sugar, kosher salt, soy sauce, and rosemary sprigs in a large 2-gallon container. Stir until the sugar is fully dissolved.

  2. 2

Add the whole chicken breasts to the brine. Refrigerate overnight — or keep in a cool space with ice — for at least 12 hours.

  3. 3

Remove the chicken from the brine and pat dry. Coat each piece generously on all sides with BBQ rub.

  4. 4

Grill over medium-high heat for 15–20 minutes, flipping occasionally. Continue cooking until the internal temperature reaches 160°F.

  5. 5

Optional: brush all sides of the chicken with BBQ sauce. Crank the heat to high and cook for another 5 minutes to caramelize the sauce.

  6. 6

Pull off the heat and let rest for 3 minutes before serving.

  7. 7

Serve with baked beans and corn.
