Boneless chicken thighs marinated and simmered in a sweet soy-ginger broth, then pulled apart and served over shredded cabbage with rice and mac salad.

The Story

Shoyu chicken is the dish that made me understand what Hawaiian plate lunch is all about. The whole meal comes together on one plate — pulled chicken over shredded cabbage, a scoop of rice, a scoop of mac salad — and every element is there for a reason. The marinade is simple: soy sauce, chicken broth, brown sugar, ginger, garlic. You stir it until the sugar dissolves, drop the chicken in, and let time do the work. After an hour of simmering, the thighs pull apart with a fork and the broth has turned into something you want to spoon over everything. The leftover sauce is worth saving — thicken it with a cornstarch slurry and you've got a glaze that's good on rice, vegetables, or anything else on the plate.

Equipment

  • Stock pot

Ingredients

  • 4 cupscooked rice
  • 1 qtmacaroni or potato salad
  • 2 cupscabbage, thinly sliced
  • 2 cupslow sodium soy sauce
  • 2 cupschicken broth
  • 2 cupsbrown sugar
  • 2 tbspfresh ginger root, ground
  • 2 tbspgarlic, minced
  • 1 tspblack pepper
  • 9boneless chicken thighs
  • 2 tbspcornstarch (optional, for sauce)
  • 2 tbspcold water (optional, for sauce)

Pudgy's Notes

Marinate overnight if you can — the flavor goes deeper the longer it sits. The leftover braising liquid is too good to waste: stir 2 tbsp cornstarch into 2 tbsp cold water to form a slurry, then stir it into the hot sauce over medium heat until thickened. Spoon it over the chicken and rice.

Instructions

  1. 1

Combine soy sauce, chicken broth, brown sugar, ginger, garlic, and black pepper in a large bowl. Stir until the sugar is fully dissolved.

  2. 2

Add the chicken thighs to the marinade. Marinate for 1 to 12 hours — longer is better.

  3. 3

Transfer the chicken and all the marinade to a stock pot. Bring to a boil, then reduce to a simmer. Cook for 1 hour.

  4. 4

Remove the chicken thighs and pull them apart with a fork into bite-sized pieces.

  5. 5

Serve the pulled chicken over a bed of shredded cabbage. Add rice and macaroni or potato salad to the plate.
