Blender batter of eggs, milk, flour, butter, and vanilla cooked one at a time in a dedicated crepe skillet — filled with strawberry mascarpone or chocolate mascarpone, rolled tight, and finished with powdered sugar.

The Story

Crepes are a patience game. The batter is simple — eggs, milk, flour, melted butter, sugar, vanilla, salt, all in the blender — but the cooking is one at a time, and the first one almost always goes in the trash. That's not a failure, that's how you calibrate the pan. The prep work happens the night before: slice four cups of strawberries thin, coat with sugar, and refrigerate overnight. The sugar pulls the juice out of the berries and concentrates the flavor. The next day you have two filling options: fold some of those sugared strawberries into mascarpone for the strawberry version, keeping the juice out so the filling stays thick, or mix chocolate syrup into a separate portion of mascarpone for the chocolate version. Both fillings go in the refrigerator until you're ready to serve. For the crepes, preheat a dedicated 8-inch crepe skillet over medium to medium-low heat for a full five minutes — a properly preheated pan is the difference between a crepe that releases cleanly and one that tears. Butter the pan and wipe it off. Add a quarter to a third cup of batter and immediately swirl the pan to spread it thin and even all the way to the edges. Flip when the crepe is set and you see just a touch of golden spots — not brown, just golden. Cook the rest one at a time, adjusting heat as needed. When cool, spread the mascarpone filling across one half of the crepe all the way to the edges, then roll it into a tight roll. Top with extra strawberries or a drizzle of chocolate, and finish with a dusting of sifted powdered sugar.

Pudgy's Notes

The overnight strawberry prep is the most important step — don't skip it. The sugar pulls the juice out of the berries and what's left is intensely flavored, slightly softened fruit that holds its shape in the filling. When you fold the strawberries into the mascarpone, drain them first and keep the juice out — too much liquid and the filling turns runny and the crepe gets soggy. A dedicated crepe skillet matters. The thin, flat bottom and low sides make swirling and flipping much easier than a regular skillet. Preheat it fully before the first crepe — five minutes over medium-low is not optional. The first crepe is almost always a calibration crepe; it tells you whether the heat is right and the pan is properly seasoned. Don't be discouraged. Swirl immediately when the batter hits the pan — it sets fast and you have about three seconds to get it spread thin and round. Look for just a touch of golden spots before flipping, not brown — brown means the heat is too high. Let the crepes cool before filling; warm crepes will melt the mascarpone and make rolling difficult. Roll tight and serve with the seam side down.

Instructions

  1. 1

Slice strawberries thin. Coat with 4 tablespoons of sugar. Refrigerate overnight — the sugar draws out the juice and concentrates the flavor. About 5 minutes active.

  2. 2

Mix some of the sugared strawberries into 1.5 pints of mascarpone. Keep as much juice out of the mixture as possible so the filling stays thick. Set aside in the refrigerator. About 1 minute.

  3. 3

Mix 1 tablespoon of chocolate syrup into 0.5 pint of mascarpone. Stir to combine. Set aside in the refrigerator. About 1 minute.

  4. 4

Combine eggs, milk, flour, melted butter, sugar, vanilla extract, and salt in the blender. Blend until completely smooth. About 2 minutes.

  5. 5

Preheat the crepe skillet over medium to medium-low heat for 5 minutes. Butter the pan and wipe it off with a paper towel.

  6. 6

Add 1/4 to 1/3 cup of batter to the skillet. Immediately swirl the pan to spread the batter thin and even, making sure it reaches the edges and forms a round shape. Flip when the crepe is set and shows just a touch of golden spots. Adjust heat as needed. The first crepe may be a throwaway. About 2 minutes per crepe.

  7. 7

Continue cooking crepes one at a time until all batter is used. About 40 minutes.

  8. 8

When crepes are cool, spread the mascarpone filling across one half of the crepe all the way to the edges. Roll into a tight roll. Top with extra sugared strawberries or a drizzle of chocolate. Dust with sifted powdered sugar. About 1 minute per crepe.

  9. 9

Repeat with remaining crepes. About 20 minutes.
