A precooked butt end city ham scored with crosshatches, studded with whole cloves, and reheated low and slow at 325°F with apple juice in the pan until it hits 135°F internal.

The Story

Holiday ham is the low-effort centerpiece — the ham is already cooked, so the job is really just reheating it well and letting it pick up some flavor along the way. Start with a butt end city ham, precooked and not pre-sliced. Score the surface in a crosshatch pattern and push whole cloves into the intersections — they perfume the meat as it heats and give the surface something to look at. Set it on an elevated roasting pan, pour two cups of apple juice into the bottom of the pan, and seal the whole thing tightly with foil. The foil traps steam from the apple juice and keeps the ham from drying out during the long reheat. Into a 325°F oven for two to three hours until the internal temperature hits 135°F. Rest it 20 minutes, then slice thin and serve alongside your favorite potato dish. Leftovers are excellent for ham and eggs in the morning.

Equipment

  • Elevated roasting pan
  • Aluminum foil
  • Instant-read thermometer
  • Oven @ 325°F

Ingredients

  • 1butt end city ham, precooked and not pre-sliced
  • 20whole cloves
  • 2 cupsapple juice

Pudgy's Notes

Buy a butt end ham, not a shank end — the butt end has more meat and less bone. Make sure it's precooked and not pre-sliced; a spiral-cut ham will dry out during the long reheat no matter how well you seal the foil. The crosshatch scoring is about more than looks — it opens up the surface so the clove aroma can work into the meat. The foil seal is critical: the apple juice needs to steam inside the tent to keep the ham moist. If the foil isn't tight, the moisture escapes and you end up with a dry ham. Pull at 135°F — it's already cooked, so you're just reheating, not cooking through. Don't rush it past 140°F or the texture suffers. Leftovers are excellent for ham and eggs the next morning.
