Grilled flank or skirt steak cut into bite-sized pieces, served in pita bread with blender chimichurri sauce, grilled red onions, tomato, and crumbled blue cheese.

The Story

Chimichurri here is a pita build, not a plated steak. The sauce goes in the blender — Italian parsley leaves (stems separated), smashed garlic, red wine vinegar, and vegetable oil drizzled in slowly on low speed until emulsified. Salt and pepper to taste. Cilantro is optional but good. The steak gets salted and peppered 30 minutes before it hits the grill. Red onion gets sliced laterally into thick rounds and goes on the grill alongside the steak over high heat. Both cook until done — about 20 minutes. Steak rests 5 minutes, then gets cut into bite-sized pieces. Onions get diced. Tomato gets sliced into semi-circles. Then it all goes into pita bread: chimichurri sauce, grilled onions, tomato, steak, and crumbled blue cheese on top.

Pudgy's Notes

Salt the steak 30 minutes before grilling — not right before, not an hour before. That window lets the salt draw out moisture and then reabsorb, seasoning the meat through rather than just the surface. Separate the parsley leaves from the stems before blending; the stems are bitter and will muddy the sauce. Drizzle the oil in slowly on low speed — dumping it in all at once breaks the emulsion and you get a greasy, separated sauce. The blue cheese is not optional — it's what makes the pita build work. Grill the onion rounds whole so they hold together on the grill, then dice after.

Instructions

  1. 1

Salt and pepper the steak 30 minutes before grilling.

  2. 2

If making pita from scratch, prepare or purchase 3 hours ahead.

  3. 3

Peel the red onion and slice laterally into 4–5 thick rounds. Set aside, about 1 minute.

  4. 4

Separate the parsley leaves from the stems. Add the leaves to a blender with the smashed garlic and red wine vinegar, about 1 minute.

  5. 5

Blend on low speed, slowly drizzling in the vegetable oil until the sauce is emulsified. Stop occasionally to scrape the sides of the blender. Season with salt and pepper to taste, about 3 minutes.

  6. 6

Slice the tomato into semi-circles. Set aside, about 1 minute.

  7. 7

Grill the red onion rounds and steak over high heat until cooked, about 20 minutes.

  8. 8

Remove the onions from the grill and dice. Set aside, about 1 minute.

  9. 9

Let the steak rest off the heat for 5 minutes.

  10. 10

Cut the steak into bite-sized pieces, about 5 minutes.

  11. 11

Assemble the pitas: spread chimichurri sauce, then add grilled onions, tomato slices, steak pieces, and crumbled blue cheese on top, about 10 minutes.
