Pork Tenderloin

55 min
Serves 6
porkgrillmarinade

Marinated pork tenderloin seared over direct heat, finished on indirect to 145°F, rested five minutes, and sliced thin.

The Story

Pork tenderloin on the grill is one of the cleaner recipes in the rotation — the marinade does the heavy lifting ahead of time, and the grill does the rest. Sear it over direct heat to build a crust, then move it to indirect heat and close the cover. Let it ride until the internal temperature hits 145°F. Pull it off, rest it five minutes, then slice thin. That's it. Tenderloin is a lean cut and it cooks fast — don't walk away from it. The difference between 145°F and 160°F is the difference between juicy and dry. Serve with pierogies if you have them.

Equipment

  • Gas or charcoal grill
  • Instant-read thermometer

Ingredients

  • 1marinated pork tenderloin

Pudgy's Notes

Tenderloin is a lean cut with almost no fat to protect it — it goes from done to dry fast. Pull it at 145°F and don't push it further. The rest is not optional; cutting into it immediately loses the juices. Unlike tri-tip, the grain on a tenderloin runs straight through, so just slice perpendicular to the length of the roast.

Instructions

  1. 1

Sear the tenderloin over direct heat on a hot grill, turning to build a crust on all sides, about 45 minutes total.

  2. 2

Move to indirect heat and close the grill cover. Cook until the internal temperature reaches 145°F.

  3. 3

Remove from the grill and rest for 5 minutes.

  4. 4

Slice into thin pieces and serve. Optional: serve with pierogies.
