Cod fillets baked over a bed of Stove Top stuffing, diced tomatoes, and lemon slices at 325°F until flaky — finished with a squeeze of lemon and tartar sauce on the side.

The Story

This is one of the simplest fish recipes in the rotation and one of the most satisfying. The stuffing goes in the bottom of an 8x8 casserole dish — prepared according to the box, which takes about ten minutes. Drained diced tomatoes go on top of the stuffing, then thin lemon slices, then the cod fillets right over everything. Salt and pepper to taste. Into a 325°F oven for 16 to 25 minutes, until the fish is flaky and tender. The stuffing absorbs the juices from the fish and tomatoes as it bakes and becomes something better than it started as. Divide into four portions, hit it with a squeeze of lemon, and serve. Tartar sauce on the side.

Equipment

  • 8x8 casserole dish
  • Oven @ 325°F

Ingredients

  • 1 packageStove Top Stuffing, Chicken variety
  • 1 candiced tomatoes, drained
  • 1lemon, sliced thin (plus extra for serving)
  • 4cod fillets, thawed
  • to tastesalt and pepper
  • as neededtartar sauce (for serving)

Pudgy's Notes

Drain the tomatoes well before adding them — excess liquid will make the stuffing soggy. The cook time range is wide because cod thickness varies; start checking at 16 minutes and pull it as soon as the fish flakes easily with a fork. Don't overbake — cod dries out quickly past done. The stuffing underneath absorbs the fish and tomato juices as it bakes and is the best part of the dish.

  4. 4

Bake at 325°F for 16–25 minutes, or until the fish is flaky and tender.

  5. 5

Divide into four portions. Squeeze fresh lemon juice over the top and serve with tartar sauce on the side.
