Grilled Tri-Tip

40 min
Serves 6
beefgrillmarinade

Santa Maria tri-tip seared over direct heat, finished over indirect to 135°F, rested five minutes, and sliced thin against the grain.

The Story

Tri-tip is a Santa Maria cut, and the Santa Maria method is the right way to cook it. Start with a marinated tri-tip — the marinade is the prep work, and it's already done. Sear it over direct heat on a hot grill to build a crust, then move it to indirect heat and close the cover. Let it ride until the internal temperature hits 135°F. Pull it off, rest it five minutes, then slice thin against the grain. That's the whole recipe. The grain on a tri-tip runs in two directions — find where they meet in the middle and slice each half accordingly. Serve with pierogies if you have them.

Equipment

  • Gas or charcoal grill
  • Instant-read thermometer

Ingredients

  • 1marinated Santa Maria tri-tip

Pudgy's Notes

The grain on a tri-tip runs in two directions — it changes partway through the roast. Find where the grain shifts and slice each section separately against its own grain. Slicing with the grain gives you tough, chewy pieces; against the grain gives you tender slices. Don't skip the rest — cutting into it immediately loses the juices. 135°F is medium-rare; pull it a few degrees early if you prefer, as it will carry over slightly while resting.

Instructions

  1. 1

Sear the tri-tip over direct heat on a hot grill, about 30 minutes total, turning to build a crust on all sides.

  2. 2

Move to indirect heat and close the grill cover. Cook until the internal temperature reaches 135°F.

  3. 3

Remove from the grill and rest for 5 minutes.

  4. 4

Slice thin against the grain and serve. Optional: serve with pierogies.
