Chuck roast slow-cooked in a crock pot with onion, celery, and carrot, then finished with a rich pan gravy built from the drippings — Worcestershire, soy sauce, thyme, and black pepper.

The Story

Pot roast in a crock pot is about as low-effort as a meal gets, and the result doesn't reflect that at all. Onion, celery, and carrot go in the bottom of the crock pot in large chunks — they're the flavor base, not the side dish. The chuck roast gets seasoned on all sides with Montreal Steak Seasoning and goes right on top. Low setting, six to eight hours, walk away. When it's done, you drain the juices through a strainer, skim the fat off the top and the solids off the bottom, and use what's left to build the gravy. Butter and flour in a saucier, whisk to a roux, then slowly add the drippings — pausing and whisking the whole way so it doesn't lump. Worcestershire, soy sauce, thyme, and black pepper go in at the end. The gravy is what makes this a meal. Serve over your choice of potatoes and vegetables. If you want a significantly better result and have the time, sear the roast in a Dutch oven first and finish it at 275°F for two and a half hours — the crust and the oven environment do things a crock pot can't.

Pudgy's Notes

Chuck roast is the right cut — the fat and connective tissue breaks down over the long cook and is what makes the meat pull apart and the drippings rich. The vegetables in the bottom of the crock pot are a flavor base, not a side dish; they'll be very soft after 8 hours. Add the drippings to the roux slowly and in stages — rushing it is how you get lumpy gravy. Only use as much liquid as you need for the consistency you want; the drippings are concentrated and a little goes a long way. For a noticeably better result: sear the roast in a Dutch oven first to build a crust, then roast covered at 275°F for about 2.5 hours instead of using the crock pot. The oven method takes more attention but the texture and flavor are on another level.

Instructions

  1. 1

Peel and chop the onion, celery, and carrot into large chunks. Place in the bottom of the crock pot, about 5 minutes.

  2. 2

Season all sides of the chuck roast generously with Montreal Steak Seasoning. Place on top of the vegetables in the crock pot, about 2 minutes.

  3. 3

Cook on the Low setting for 6–8 hours.

  4. 4

Drain the juices through a strainer into a bowl or measuring cup, about 2 minutes.

  5. 5

Skim the fat off the top and discard any solids from the bottom. Reserve the remaining juice, about 2 minutes.

  6. 6

Melt butter in a saucier over medium-high heat. Add flour and whisk together to form a roux, about 2 minutes.

  7. 7

Slowly add the reserved drippings to the roux, pausing and whisking as you go to prevent lumps. Add only enough liquid to reach your desired gravy consistency. Keep over medium-high heat until the gravy just starts to boil, then reduce to low. Add additional liquid as needed to maintain consistency, about 10 minutes.

  8. 8

Stir in Worcestershire sauce, soy sauce, thyme, and black pepper.

  9. 9

Serve the roast with your choice of potatoes and vegetables. Top with gravy.
