Pork steaks seasoned with Lawry's, seared over high heat, then braised in BBQ sauce and beer in disposable tins on the grill — covered for 30 minutes, uncovered for 30 more until the sauce thickens and the steaks are tender.

The Story

Pork steak is a St. Louis thing, and this is the St. Louis way to cook it. The sauce goes in the tins first — two bottles of Kraft Original BBQ sauce, rinsed out with beer so nothing gets left behind, topped off with the rest of the lager. Nine pork steaks get seasoned on both sides with Lawry's Seasoned Salt and pepper, then go straight onto a hot grill for a hard sear. After that they go into the tins, get covered with foil, and cook over indirect heat with the lid closed and the other burners on high for 30 minutes. The foil comes off for another 30 minutes — still indirect, lid closed — until the sauce has thickened down and the steaks are as tender as you want them. The beer in the sauce keeps it from scorching and adds a subtle malt depth that straight BBQ sauce doesn't have. Serve with fried potatoes and green beans. And yes, drink whatever beer is left over while the sauce goes together.

Pudgy's Notes

Use disposable cooking tins — they go directly on the grill grates over indirect heat and make cleanup easy. Rinsing the BBQ sauce bottles with beer gets every bit of sauce out and is part of the liquid balance in the tins. The covered 30 minutes braises the steaks and keeps the sauce from reducing too fast; the uncovered 30 minutes is where the sauce thickens and the flavor concentrates. Keep the other burners on high the whole time to maintain grill temperature. Kraft Original is the sauce here — don't substitute a smoky or honey variety or the flavor profile changes.

Instructions

  1. 1

Divide the BBQ sauce between two disposable cooking tins. Rinse the bottles with a splash of beer and add to the sauce. Add the remainder of the beer to the tins. Stir well, about 10 minutes.

  2. 2

Season both sides of the pork steaks with Lawry's Seasoned Salt and black pepper, about 2 minutes.

  3. 3

Grill the pork steaks over high heat until seared on both sides, about 6 minutes.

  4. 4

Place the seared steaks into the tins with the BBQ sauce and beer mixture. Cover tightly with foil. Cook over indirect heat with the grill lid closed and the other burners on high for 30 minutes.

  5. 5

Remove the foil. Continue cooking over indirect heat with the grill lid closed for another 30 minutes, until the sauce has thickened to your liking and the steaks are tender.

  6. 6

Serve with fried potatoes and green beans.
