London broil cubed and marinated in Italian dressing, skewered with bell peppers and sweet onion, grilled over high heat, and served in pita with tzatziki sauce.

The Story

Beef kabobs are one of those recipes where the marinade does most of the work. London broil — or any similar lean roast — gets cut into 3/4-inch cubes and goes into a gallon bag with a cup of Kraft Zesty Italian dressing. Anywhere from one hour to twelve hours works; the longer it sits the deeper the flavor. Bell peppers and sweet onion get cut into 3/4-inch squares to match the meat so everything cooks at the same rate on the skewer. Grill over high heat until the beef hits your preferred temperature, rest five minutes, then pull everything off the skewers and load it into halved pitas dressed with tzatziki. The pita-and-tzatziki serve is the move here — it turns kabobs into a proper handheld meal. Serve with rice and macaroni or potato salad on the plate, or go with a cucumber, tomato, and feta salad on the side. Beef Rice-a-Roni prepared according to the box is a natural pairing.

Equipment

  • Gas or charcoal grill
  • Metal or soaked wooden skewers
  • 1-gallon storage bag (for marinade)

Ingredients

  • 2 lbsLondon broil or similar lean roast, cut into 3/4" cubes
  • 1 cupItalian salad dressing (Kraft Zesty or similar)
  • 3bell peppers, sliced into 3/4" squares
  • 2 mediumsweet onions, sliced into 3/4" squares
  • 12pitas
  • 1 qttzatziki sauce

Pudgy's Notes

Cut the beef and vegetables to the same 3/4-inch size so they cook evenly on the skewer — oversized vegetables will be raw when the meat is done, undersized pieces will char before the beef is ready. The Italian dressing marinade is simple but effective; Kraft Zesty is the standard here. Marinating overnight gives the deepest flavor but even one hour makes a noticeable difference. Load the pitas generously with tzatziki before adding the meat — it's the sauce that makes this a sandwich rather than just kabobs on bread.

Instructions

  1. 1

Cut the roast into 3/4" cubes, about 15 minutes.

  2. 2

Place the beef cubes in a 1-gallon storage bag with 1 cup of Italian dressing. Marinate for 1 to 12 hours.

  3. 3

Slice the bell peppers and sweet onions into 3/4" squares, about 25 minutes.

  4. 4

Skewer the meat and vegetables as desired.

  5. 5

Grill over high heat until the beef reaches your desired internal temperature, about 25 minutes.

  6. 6

Remove from the grill and rest for 5 minutes.

  7. 7

Slice the pitas in half and dress the inside of each with tzatziki sauce, about 15 minutes.

  8. 8

Remove the meat and vegetables from the skewers and place into the pitas, about 5 minutes.

  9. 9

Serve as sandwiches with rice and macaroni or potato salad. Optional: serve with a cucumber, tomato, and feta salad. Beef Rice-a-Roni prepared according to the box is a great side.
