Seasoned chicken thighs and fork-tender Yukon Gold potatoes in a rich roux-based gravy with peas and carrots, baked in a double pie crust at 375°F until golden.

The Story

Chicken pot pie is a project, but it's a straightforward one if you work through it in order. The potatoes go into cold water while you prep everything else — that keeps them from oxidizing and also rinses off some of the surface starch so they don't get gluey in the gravy. The chicken thighs get seasoned and fried hard over high heat, then cut into half-inch pieces. The gravy is a classic roux: butter, flour, chicken broth, and milk, whisked together until it's thick enough to coat a spoon — not thin, not gloppy. Worcestershire, soy sauce, garlic powder, and black pepper go in at the end. Then the chicken, potatoes, and frozen peas and carrots all get folded in. The whole filling goes into a double-crust 9x13, vented on top, and baked at 375°F until the crust is done. Serve it as a standalone meal or with a salad. Sour cream and Frank's Red Hot on top is the move.

  • 6chicken thighs
  • 2 tbspItalian seasoning

  • 4 tbspbutter

  • 1/2 cupchicken broth
  • 1 cupmilk
  • 1 tbspWorcestershire sauce
  • 1 tspsoy sauce
  • 1 1/2 cupsfrozen peas and carrots

Pudgy's Notes

Keep the diced potatoes in cold water until you're ready to boil them — it prevents oxidizing and rinses off surface starch so they don't turn gluey in the gravy. Don't let the gravy go thin; it should coat a spoon before you add the filling. The soy sauce is a small amount but it deepens the savory flavor noticeably — don't skip it. Sour cream and Frank's Red Hot on top is optional but highly recommended.

Instructions

  1. 1

Peel and dice the Yukon Gold potatoes into 3/8" cubes. Store in a bowl of cold water until needed.

  2. 2

Season the chicken thighs front and back with 2 tbsp Italian seasoning, 1 tbsp garlic powder, and 1 tsp black pepper.

  3. 3

Drain the potatoes and add to a stockpot with 6 quarts of lightly salted water. Bring to a boil, then reduce to a simmer and cook for 10 minutes or until fork tender. Drain and return to the pot. Set aside.

  4. 4

Coat a large skillet with 2 tbsp olive oil and heat over high heat. Fry the chicken thighs on both sides until cooked through, about 10 minutes. Drain the oil from the skillet.

  5. 5

Cut the cooked chicken thighs into 1/2" pieces. Set aside.

  6. 6

In the same skillet over medium-high heat, melt the butter, scraping up any chicken bits from the pan. Add the flour and stir to form a roux, making sure all the flour is coated in butter, about 2 minutes.

  7. 7

Slowly add the chicken broth, whisking constantly, about 2 minutes. Then slowly add the milk, whisking constantly. The gravy should be thick — not thin.

  8. 8

Heat to just before boiling, then reduce heat and stir occasionally, about 5 minutes.

  9. 9

Add the Worcestershire sauce, soy sauce, 1 tsp garlic powder, and 1/2 tsp black pepper. Stir to incorporate. Taste and adjust salt and pepper.

  10. 10

Add the chicken pieces and potatoes to the gravy. Stir to incorporate. Add the frozen peas and carrots and stir to combine.

  11. 11

Preheat oven to 375°F. Roll out the bottom crust to fit the 9x13 casserole dish and up the sides. Add the chicken and gravy filling and spread evenly.

  12. 12

Roll out the top crust and place over the filling. Cut vent holes with a knife.

  13. 13

Bake at 375°F for 35 to 45 minutes until the top crust is golden and done. Let rest 5 minutes.

  14. 14

Serve as a standalone meal or with a salad. Top with sour cream and Frank's Red Hot if desired.
