Chicken breasts sliced into thirds, marinated in Montreal seasoning for two hours, grilled to 165°F, then finished with a fresh dusting of seasoning and a five-minute rest.

The Story

The trick with Montreal Grilled Chicken is in how you break down the breast before it ever touches the marinade. Four chicken breast halves become twelve pieces by slicing off the thin side of each breast and then fileting the thicker part in half — you end up with pieces that are all roughly the same thickness, which means they cook evenly on the grill instead of having the thin end dried out before the thick end is done. Two packets of Montreal chicken seasoning go into the marinade for two hours. The third packet comes out at the end, sprinkled over the cooked breasts right off the grill, then a five-minute rest before serving. That final dusting is what gives it the bright, forward seasoning flavor on top of the deeper marinated flavor underneath. Great with a tomato and cucumber salad and corn.

Equipment

  • Gas or charcoal grill
  • Instant-read thermometer

Ingredients

  • 4chicken breast halves
  • 3 packetsMontreal chicken seasoning (2 for marinade, 1 for finishing)

Pudgy's Notes

Slicing each breast into thirds before marinating is the key step — it gives you uniform thickness across all pieces so nothing overcooks on the grill. The thin side and the two filet halves from the thicker part will all be close in size. The third seasoning packet goes on after cooking, not before, so the seasoning flavor stays bright and forward on the finished chicken rather than burning off on the grill.

Instructions

  1. 1

Slice each chicken breast into thirds: cut off the thin side of the breast, then filet the thicker part in half. You should have 12 roughly even pieces from 4 breasts.

  2. 2

Marinate the chicken pieces with 2 packets of Montreal chicken seasoning according to the package directions. Marinate for 2 hours.

  3. 3

Grill the chicken pieces until the internal temperature reaches 165°F, about 15 minutes.

  4. 4

Remove from the grill and immediately sprinkle the third packet of Montreal seasoning over the cooked pieces. Let rest for 5 minutes.

  5. 5

Serve with your favorite side dish. Great with a tomato and cucumber salad and corn.
