Ground beef with Italian breadcrumbs, egg, Worcestershire, beef bouillon, onion, and celery, pressed into two loaf pans, topped with ketchup, and baked at 400°F for one hour.

The Story

Meatloaf is one of those recipes where the technique matters more than the ingredient list. The mix is simple — ground beef, Italian breadcrumbs, egg, Worcestershire, beef bouillon, very finely diced onion and celery — but how you handle it in the pan is what separates a good meatloaf from a dense one. Dividing into two loaf pans and using plastic wrap to press one pan into the other molds the loaf tightly and evenly without overworking the meat. Tucking the edges down with your fingers after that keeps the loaf from pulling away from the sides as it cooks. The ketchup goes on top before it goes in the oven — spread it all the way to the edges so it caramelizes into a glaze across the whole surface. One hour at 400°F, rested five minutes, drained, and sliced into 3/8-inch pieces. That's it.

Equipment

  • 2 loaf pans
  • Baking sheet
  • Large mixing bowl
  • Oven @ 400°F

Ingredients

  • 3 lbsground beef
  • 1/2 cupItalian-style breadcrumbs
  • 1egg
  • 1 tbspWorcestershire sauce
  • 1 tspbeef bouillon
  • 1 mediumonion, very finely diced
  • 1 stalkcelery, very finely diced
  • 4 tbspketchup (for topping)

Pudgy's Notes

Dice the onion and celery very finely — large pieces won't cook through in the loaf and you'll get crunchy bits. The plastic-wrap press technique compresses the loaf evenly without overworking the meat by hand. Tucking the edges down after pressing keeps the loaf from shrinking away from the pan sides during cooking. Always use a baking sheet under the loaf pans; at 400°F the grease will bubble and spill. Rest before slicing or the loaf falls apart.

Instructions

  1. 1

Preheat oven to 400°F, about 30 minutes.

  2. 2

Combine the ground beef, breadcrumbs, and egg in a large mixing bowl, about 5 minutes.

  3. 3

Add the Worcestershire sauce and beef bouillon. Combine, about 1 minute.

  4. 4

Add the very finely diced onion and celery. Combine, about 1 minute.

  5. 5

Divide the mixture in two and place each half into a loaf pan, about 2 minutes.

  6. 6

Place plastic wrap on the bottom of one loaf pan and press it firmly into the other to mold and compress the loaf. Repeat with the second pan, about 1 minute.

  7. 7

Using your fingers, tuck the edges of each loaf down along the sides of the pan, about 1 minute.

  8. 8

Squeeze ketchup on top of each loaf and spread evenly to the edges with a spoon, about 1 minute.

  9. 9

Place both loaf pans on a baking sheet to catch any grease spillover. Bake at 400°F for 1 hour or until the internal temperature reaches 160°F.

  10. 10

Remove from the oven and let rest for 5 minutes. Drain the grease and remove the loaves from the pans.

  11. 11

Slice each loaf into 3/8-inch pieces and serve.
