London broil sliced thin, wok-seared over high heat with bok choy and onions in a savory brown sugar soy sauce.

The Story

This is the stir fry I keep coming back to. London broil sliced thin, cooked in batches over screaming high heat so it actually sears instead of steams, then brought back together with bok choy, celery, and onions in a sauce that hits every note — savory, sweet, a little sesame. The cornstarch slurry at the end is what makes it restaurant-quality: push everything to the sides, drop the slurry in the center, and let it thicken before you fold it in. The whole thing comes together fast once the prep is done, so have everything ready before the wok goes on.

Equipment

  • Wok or large skillet
  • Small ramekin (for slurry)

Ingredients

  • 2 1/2 cupscooked rice
  • 4 stalksbok choy, julienned
  • 2 stalkscelery, bias sliced
  • 2medium onions, radially sliced
  • 3 lbsLondon broil (or better cut), sliced thin
  • 1/2 cupbeef broth
  • 1/2 cuplow sodium soy sauce
  • 1/2 cupbrown sugar
  • 1 tbsphoisin sauce
  • 1/2 tbsprice vinegar
  • 1 tspsesame oil
  • 1 tbspminced ginger
  • 1 tbspminced garlic
  • 1 tspwhite pepper
  • 1 tbspcornstarch
  • 1 tbspcold water
  • 2 tbspvegetable oil, divided
  • 1 tspsesame oil, for cooking

Pudgy's Notes

Cook the beef in batches — crowding the wok drops the temperature and you'll get steamed meat instead of a sear. Drain off any liquid that pools between batches for the same reason. Start with half the slurry and add more as needed; it thickens fast. Optional additions: grated carrots, bean sprouts, or other vegetables. Add chili pepper flakes or paste for heat. Substitute chicken and chicken broth for a lighter version. A dusting of Chinese Five Spice in the sauce adds a lot more depth.

Instructions

  1. 1

Julienne the bok choy, bias-slice the celery, and radially slice the onions. Set vegetables aside in a bowl.

  2. 2

Slice the London broil thin against the grain. Set aside.

  3. 3

Combine beef broth, soy sauce, brown sugar, hoisin sauce, rice vinegar, sesame oil, ginger, garlic, and white pepper in a bowl. Stir well and set aside.

  4. 4

In a small ramekin, stir together the cornstarch and cold water until smooth to form a slurry. Set aside.

  5. 5

Heat the wok over high heat. Add a light coating of vegetable oil and a splash of sesame oil. Sauté the vegetables for about 3 minutes until the onions are just slightly translucent — don't overcook. Return vegetables to their bowl.

  6. 6

Add 2 tablespoons of vegetable oil to the hot wok. Cook the beef in batches over high heat for about 6 minutes total, draining any water that accumulates so the meat sears rather than steams.

  7. 7

Add the vegetables back to the wok with the beef over medium heat. Stir to combine.

  8. 8

Pour the sauce over the stir fry and heat until it just approaches a boil, about 3 minutes.

  9. 9

Push the stir fry to the sides of the wok, clearing the center. Add the cornstarch slurry to the center a little at a time, stirring frequently, until the sauce reaches your desired thickness. Fold everything together.

  10. 10

    Serve over cooked rice.
