Johnsonville sausage medallions seared hard, deglazed with dry sherry, and finished in marinara. The buttered noodles are non-negotiable.

The Story

Spaghetti night at our house has always meant Italian sausage — not ground beef. Johnsonville links sliced into medallions, seared hard in a hot skillet until the edges caramelize, then deglazed with dry sherry and finished in marinara. The sherry is the move. It lifts all those browned bits off the pan and gives the sauce a depth that takes it well past jarred marinara. The noodles get buttered and seasoned before the sauce ever touches them, which sounds like an extra step but makes every bite taste like you put in way more effort than you did.

  • Large skillet
  • Stock pot
  • Medium saucepan

Pudgy's Notes

Any flavor of Johnsonville Italian sausage works here — sweet, mild, or hot. The dry sherry deglaze is what sets this apart; don't skip it or substitute with wine. Rinsing the marinara jar with beef broth is a small thing that adds real body to the sauce. The buttered noodle step is not optional — it's what makes this recipe.

Instructions

  1. 1

Slice each sausage link into 1/4-inch thick medallions.

  2. 2

Pour the marinara into a medium saucepan. Rinse the jar with the beef broth and add it to the pan along with the basil. Heat over low heat, stirring occasionally, until warmed through — about 15 minutes. Keep warm on low.

  3. 3

Heat a large skillet over medium heat until it reaches 200–250°F, about 2 minutes. Add the vegetable oil.

  4. 4

Add the sausage medallions in a single layer. Cook over high heat for about 15 minutes, flipping each piece as needed to get a good sear on both sides without burning. You want deep caramelization on the cut faces.

  5. 5

Remove the sausages from the pan. With the heat still on, pour in the dry sherry to deglaze — scrape up all the browned bits from the bottom of the pan.

  6. 6

Return the sausages to the pan. Pour in the warm marinara sauce and stir to combine. Simmer over low heat for about 10 minutes to let everything come together.

  7. 7

Meanwhile, bring 6–8 quarts of lightly salted water to a boil in a stock pot. Cook the spaghetti according to package directions. Drain and return to the pot.

  8. 8

Add butter, Parmesan, garlic powder, and black pepper to the hot drained noodles. Toss well to coat every strand.

  9. 9

Serve the buttered noodles topped or mixed with the sausage and sauce as you like.
